DECADENT LAVENDER COOKIES

1/2 cup shortening
1/2 cup butter, softened
11/4 cups sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2-1/4 cups all purpose flour
4 teaspoons dried culinary lavender flowers
1 teaspoon baking powder
1/2 teaspoon salt

In a large mixing bowl, cream the shortening, butter and sugar. Add eggs,
one at a time, beating well after each addition. Beat in extracts. Combine
the flour, lavender, baking powder and salt, and gradually add to creamed
mixture and mix well.

Drop by rounded teaspoonfuls 2 in. apart onto baking sheets lightly coated
with non-stick cooking spray. Bake at 375o for 8 to 10 minutes before
removing to wire racks. Yields abut 7 dozen cookies.


CREAMY LAVENDER POTATO AND LEEK SOUP

4 slices bacon
3 large leeks, (whites only)
2 minced garlic cloves
6 medium potatoes, diced
6 cups chicken broth
1/2 tsp. dried Culinary Lavender
1/2 cup heavy cream
1/2 cup milk
11/2 tsp. Herbs de Provence
Salt and Pepper

Fry the bacon until crisp, then crumble and set aside. Slice thin the whites
of the leeks. Add leeks to bacon fat and sauté until leeks are soft. Add
garlic, potatoes and chicken broth to leeks and simmer until potatoes are
soft.(about 15 minutes)

Cool slightly, then carefully puree soup and lavender in food processor
until smooth. Return to pot and add cream, milk, crumbled bacon, Herbs de
Provence and reheat. Do not boil. Salt and Pepper to taste, and enjoy!.
